Tips for Healthy Cooking

The world is replete with information about healthy foods, ranging from whole food diets to healthy diet recipes that promise to help you lose weight.  However, while these are certainly important topics, the way in which you cook your food is also vital.  Healthy cooking means knowing the drawbacks to many of the standard ways in which we cook in the modern world and learning how to avoid it.  What should you know about more healthful cooking?

Avoid the Frying Pan

Of course, this advice has been touted for decades.  Everyone knows that fried foods are bad for them – but they’re just so darn good.  From fried chicken to grilled cheese sandwiches, anything that comes from the frying pan almost has to be good.  However, it is essential that you stop eating fried foods immediately.  If there is one single most important step in healthy cooking, it is eliminating the use of the frying pan in your food preparation.

Bake the Right Way

Baking has long been proffered as a better option than frying.  You will even find baking coatings designed to mimic the delightful crust achievable only with a frying pan.  However, baking is not as healthy as you might believe.  If you do it correctly, though, it can be a good way to get into healthy cooking.  When you bake, make sure that you place your food on a rack within the baking pan.  This keeps it out of the rendered fat and juice that will accumulate at the bottom of the pan and increases the healthfulness of your meal.

Learn to Steam

If you don’t like the taste of vegetables, it might just be the way that you’re making them.  Don’t boil that squash – put it in the steamer.  Most people find that healthy cooking is a difficult task to master when the food is unpalatable.  However, if you begin steaming your veggies, rather than boiling them, you will find that they are much tastier than you imagined.  You should also opt for fresh vegetables, rather than canned.  If possible, buy your veggies from a local farmer, or head to your local farmers market to peruse their offerings.  Fresh vegetables are always better tasting and will help you stay the course with healthy cooking.

There are other tips for healthier cooking, such as avoiding the grill, not using butter and other essential information, but the above will help you get started on the right foot.

Hot Water Recirculation – What Are the Benefits and Pitfalls?

The benefits of hot water recirculation are rather obvious. You get nearly instant hot water which is convenient, and you save a substantial amount of water. But there are a few other issues to consider.

There are a number of types of recirculation systems for residential plumbing. There are the traditional full-time circulating systems that continuously pump a small flow of hot water through the piping from the heater to the fixtures and back to the inlet of the heater.

Hot water recirculation pumps are wasteful of energy

Full-time recirculation pumps are very wasteful of energy. Your water heater will have to work much harder to supply the heat needed to replace the heat being radiated from the piping system. In years past when energy was cheap and plentiful these systems were very popular, however, in today’s energy conscious environment they are becoming rare in residential plumbing systems.

There are ways to reduce the energy loss such as putting the pump on a timer to reduce the number of hours it runs.  The downside to this is that if you want hot water when the system is off, you will have a long wait and you will run a lot of water down the drain. And the system is still continuously losing heat energy while operating.

Temperature control of the pump can further reduce the energy loss from the system, but not very much unless you turn the temperature down substantially, which kind of defeats the purpose of having a recirculating system to begin with.

Troubles with Tankless

Another problem with recirculation systems is that the water flow is very low, usually not enough to turn on a tankless water heater.  This is unfortunate, since tankless heaters require even more time than a storage type heater to provide heated water to the fixtures.

Warm-water recirculating pumps

Several manufacturers like RedyTemp, Grundfos, Laing, and Watts are now offering what I like to call luke-warm recirculating pumps.  These pumps are again, low flow hot water circulating pumps, but controlled by the water temperature.

These pumps and in some cases valves are placed under the sink at the fixture furthest from the heater.  The sense the water temperature in the piping and turn on around 85 degrees F, and off at 90 degrees F. The turn on and off temperatures may vary, and some models offer the ability to adjust the temperature.

The problems are the same as using a traditional circulating system, large energy losses from circulating warm water through the piping. It’s less wasteful than the higher temperature circ systems, but still uses far more energy than a normal residential plumbing system. Since this system tends to raise the temperature in the cold water piping quite a bit since it is in the recirculating loop.

Many people do not like luke-warm cold water, and they end up running water down the drain purging the warm water out of the lines to get cold water.

Hot water demand pumps save water AND energy

The most energy efficient type of recirculating system is the hot water demand system.  The demand system pump only operates when you desire hot water. When you push the start button, or activate it with some other means such as a motion detector, the pump comes on and speeds the heated water to your fixture, sending the cooled off water from the previous use back to the heater through the cold water piping.

The pump shuts off when it detects the arrival of hot water.  At that point you can turn on the faucet and you have instant hot water. No more hot water was used than if you had not used a pump, except for the energy to run the pump itself.  The pumping energy for a typical use is microscopic. These systems typically use about .00 per year in electricity to operate.

Several companies offer hot water demand systems including TACO pump, Metlund D’mand Systems, and the RedyTemp can be operated in a demand mode as well.  Most of these systems use standard old fashioned low power low flow recirculation pumps. Metlund and RedyTemp use Taco pumps.

These manufacturers tend to provide miss-leading information about the pumps inferring that they can pump 14 and even 28 gallons per minute. That would be true if there was no pipe hooked to the outlet of the pump, but there is, and that is why many of them are not recommended for tankless heaters; they don’t pump even the ½ to ¾ gallons per minute needed to turn on the heater.

Vintage Recipes for Chinese Style Entrees

Chinese-style meals are not only tasty, they are usually quick, easy, inexpensive and healthy.  In my vintage recipe collection I have two great recipes to share. 

 Chicken and Vegetables Chinese is definitely a recipe that has the above mentioned attributes.  It is easy to make, doesn’t take much time, the ingredients aren’t expensive, and it makes six servings of only 200 calories each.  That’s a pretty good deal!

CHICKEN AND VEGETABLES CHINESE

1 lb boneless, skinned chicken breast cut into 1 1/2″ pieces
2 cans chicken broth or 4 to 5 chicken bouillon cubes dissolved in 3 cups boiling water
1/2 cup raw rice
2 tbsp soy sauce
1/4 tsp ground ginger
2 cups sliced carrots
1 cup sliced green onions
1 small can chinese vegetables, drained
1/2 cup cooking sherry
1 clove minced garlic
1/4 tsp sage
1/2 cup sliced celery
1/2 cup sliced green pepper (bell pepper)
6-oz pkg frozen pea pods or peas

Brown chicken in a large Pam sprayed pan. Add broth, rice, sherry, soy sauce, garlic and ginger. Simmer, covered, 15 minutes. Add remaining ingredients and simmer until tender. Makes 6 servings of about 200 calories each.

Sweet and Sour Pork slow cooks for one hour but otherwise is a quick recipe.   Again, it is not expensive, it is easy and again, it is a healthy meal.

SWEET AND SOUR PORK

1 lb pork tenderloin, cut into strips
oil for browning
1/3 cup water
1 1/2 tbsp cornstarch
1/3 cup brown sugar
1/3 cup vinegar
3/4 cup pineapple juice
2 tsp soy sauce
1 cup sliced mushrooms
2 cups pineapple chunks
1 green pepper, cut in strips

Brown pork in oil. Add water and cook slowly for 1 hour. Add cornstarch, brown sugar, vinegar, pineapple juice, and soy sauce; mix well. Simmer 15 minutes. Add remaining ingredients and simmer 5 minutes. Serve over rice.

20-year-old Recipe for French Chocolate Silk Squares

I believe this recipe came from a 1989 edition of Woman’s Day magazine but I can’t be sure.  It was listed in the “Eating Healthy” section  because it has 1 1/2 tablespoons of oat bran in every square.  Each square also has 188 calories, 4 grams protein, 26 grams carbs, 9 grams fat, 0 mg cholesterol, and 130 mg sodium.  That is pretty good numbers for a dessert!  This is great for family meals, co-workers, holiday gift giving, bake sales, church potluck, etc.  Who doesn’t love the idea of chocolate and healthy all in one?  Give these French Chocolate Silk Squares a try today and see just how well healthy and chocolate can be together!

FRENCH CHOCOLATE SILK SQUARES

This recipe is a clipping from a 1989 Woman’s Day magazine according to the notes I found with it.

Crust:
1/2 cup margarine, at room temperature
1/4 cup confectioners’ sugar
1 1/2 cups uncooked oat bran
1/2 cup all-purpose flour
1/4 tsp salt

Heat oven to 350 degrees. Line an 8 or 9-inch square baking pan with foil. Spray foil with no-stick cooking spray. TO MAKE CRUST: Mix margarine and sugar in a medium-size mixing bowl until blended and smooth. Add oat bran, flour and salt; stir just until blended. (Mixture will be moist and slightly crumbly.) Turn into prepared pan and press firmly and evenly over bottom. Bake 20 to 25 minutes just until edges start to brown.

Topping:

Whites from 3 large eggs
1/3 cup unsweetened cocoa powder
1/4 cup all-purpose flour
1 cup packed brown sugar
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1/8 tsp salt

While crust bakes, put all topping ingredients into a medium-size bowl and whisk until smooth. Pour over the partially baked crust. Bake 20 tl 25 minutes longer until top looks dry and slightly puffed. Cool completely in the pan on rack. Lift foil by ends onto a cutting board. Peel off foil. Cut into 16 squares, dipping knife into hot water before making each cut.

Note: These keep well up to 1 week in tightly covered container in cool place with waxed paper between layers. Dust with confectioners’ sugar just before serving.

White Rice au Gratin Casserole

3 cups white rice, fully cooked
1 1/2 cups low-fat cheddar cheese, shredded
3 tablespoons light butter or margarine
1/4 teaspoon curry powder
1 cup bread, crumbled and cubed
salt and black pepper, to taste

Cook your rice according to package directions and drain. Toss with half of the cheddar cheese. Spoon mixture into a buttered casserole dish and top with the remaining cheddar cheese. Bake in a 350 degree oven for 12 to 15 minutes.

Meanwhile, melt butter in a large skillet. Stir in the curry powder and bread crumbs. Continue to simmer until the bread crumbs are lightly browned. Remove your casserole from the oven and sprinkle the top with curried bread crumbs, salt and pepper. Serve immediately.

Stove-Top Zucchini and White Rice

3/4 cup onions, finely chopped
1 pound zucchini, thinly sliced
3 tablespoons light butter or margarine
1 cup canned yellow corn, drained
1 cup canned tomatoes, chopped
3 cups white rice, fully cooked
1 1/2 teaspoons table salt
1/2 teaspoon black pepper
1/4 teaspoon ground coriander
1/2 teaspoon dried oregano

In a large skillet, saute the chopped onions and sliced zucchini in butter or margarine until tender. Add the remaining ingredients one at a time and stirring in between each addition. Cover the skillet and simmer on medium heat for 15 minutes or until your vegetables are tender and done.

King Ranch Chicken Casserole

Ingredients:

8- 8″ corn tortillas, divided
Chicken broth
2 tbsp butter
1 onion, chopped
1 green bell pepper, chopped
1- 14oz can cream of chicken soup
1- 14oz can cream of mushroom soup
1 tbsp chili powder
3 to 4 pound fryer, cooked, boned and diced
1- 12oz pkg shredded American cheese
1- 10oz can chopped tomatoes & green chilies (Ro-Tel if available)

Directions:

Preheat oven to 350F. In a 10×14 inch greased casserole oven dish, layer half the tortillas dipped in hot chicken broth, just long enough to soften. In a skillet, sauté onion & bell pepper in butter. Stir in soups, chili powder and diced chicken. Pour half the mixture over the dipped tortillas, then half the shredded cheese. Repeat layers: tortillas, mixture & cheese ending by pouring the tomato-green chilies over the top.

Bake for 40-45 minutes or until hot and bubbly. This casserole may be frozen and reheated! If freezing, be sure to wrap appropriately, or use an appropriate sized glass dish with lid.
